Crispy Cheesy Beef Tacos (The 25-Minute Taco Day Recipe)
- Ready in 25 minutes
Some dinners need no introduction — crispy shell, juicy seasoned beef, and a blanket of melted cheddar. These Cheesy Beef Tacos are the taco-night classic done right: the ground beef is seasoned bold and browned until deeply savory, the shells get a quick oven-crisp so they stay crunchy and don’t crack when filled, and everything is piled high with lettuce, tomato, and a double handful of cheese that melts into every bite. One skillet, 12 simple ingredients, 25 minutes start to finish. Happy National Taco Day — this is the dinner your family will ask for on repeat.
What you need
- 1 lb (450 g) ground beef (85/15)
- 8 hard-shell taco shells
- 2 cups (230 g) shredded cheddar cheese, divided
- 1 small yellow onion, finely diced (about 1 cup / 150 g)
- 2 cloves garlic, minced
- 2 tbsp (16 g) taco seasoning (chili powder, cumin, paprika, oregano, salt, black pepper)
- 1/2 cup (120 ml) tomato sauce
- 1 cup (100 g) shredded iceberg lettuce
- 1 large tomato, diced (about 1 cup / 150 g)
- 1/4 cup (60 g) sour cream, for serving
- 2 tbsp vegetable oil
- Fresh cilantro and lime wedges, for serving
- Heat the oil in a large skillet over medium-high heat. Add the diced onion and cook 2-3 minutes until softened. Add the garlic and cook 30 seconds more.
- Add the ground beef, breaking it into small crumbles. Cook 6-8 minutes until browned and no pink remains. Drain off excess fat.
- Stir in the taco seasoning and tomato sauce. Simmer 3-4 minutes until thick and glossy. Taste and adjust salt.
- Meanwhile, warm the taco shells in a 350F (175C) oven for 5 minutes until crisp and hot.
- Fill each shell with the seasoned beef, top generously with shredded cheddar, then pile on lettuce and diced tomato. Serve with sour cream, cilantro, and lime wedges.
Tips & Variations
- Brown the beef well — those crispy browned bits are where the flavor lives.
- Drain the fat before adding seasoning so the filling stays rich, not greasy.
- Warming the shells in the oven makes them crisp and prevents cracking when filled.
- Cheese goes on the hot beef first so it melts into the filling.
- Variations: swap cheddar for pepper jack or a Mexican blend; add pickled jalapeños for heat; use soft flour tortillas warmed in a dry skillet for a street-taco version.
