Mango Mousse Cups (Light, Creamy, No-Bake)

Mango mousse cups are the kind of dessert that looks special and takes very little work. Ripe mango puree folds into softly whipped cream with a little gelatin to help it set, then the mixture chills in small cups until light and spoonable. There is no baking and no complicated technique. Make them in the morning, chill for 4 hours, and top with diced mango just before serving for a cool, golden dessert.

Why This Recipe Works

  • Whipped cream keeps it light: Folding, not beating, the puree into whipped cream keeps the air in and the texture soft.
  • A little gelatin sets the cups: Gelatin gives the mousse enough body to hold in a cup without turning firm or rubbery.
  • Ripe mango does the flavor work: Sweet, ripe mangoes mean the mousse needs only a little sugar.
  • Individual cups serve cleanly: Small glasses or cups make portioning easy and look ready for guests.

Ingredients

  • 2 cups (480 ml) mango puree, from about 2 large ripe mangoes, plus 1/2 cup (75 g) diced mango for topping
  • 1 1/2 teaspoons (5 g) unflavored gelatin
  • 2 tablespoons (30 ml) cold water
  • 1 cup (240 ml) heavy cream, cold
  • 1/4 cup (30 g) powdered sugar
  • 1 tablespoon (15 ml) fresh lime juice
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • Mint leaves, for topping (optional)

How to Make Mango Mousse Cups

Step 1: Bloom and dissolve the gelatin

Sprinkle the gelatin over the cold water in a small bowl and let it stand for 5 minutes until spongy. Warm it gently in the microwave for 10 seconds, or in a small pan over low heat, just until liquid. Do not boil it. Stir it into the mango puree with the lime juice.

Step 2: Whip the cream

Whip the cold heavy cream with the powdered sugar and vanilla extract in a chilled bowl until soft peaks form. The cream should hold a soft peak that flops over, not a stiff point.

Step 3: Fold and fill the cups

Add about one-third of the whipped cream to the mango mixture and stir to loosen it. Gently fold in the rest of the cream with a spatula until no white streaks remain. Divide evenly among 4 small cups or glasses.

Step 4: Chill and top

Cover and refrigerate for at least 4 hours, until set but still soft and spoonable. Just before serving, top each cup with diced mango and a mint leaf, if using.

Tips

  • Use ripe, sweet mangoes: Taste the puree first. If it is tart, add powdered sugar a tablespoon at a time before folding in the cream.
  • Keep the cream cold: Cold cream whips faster and holds more air. Chill the bowl too if your kitchen is warm.
  • Fold gently: Stirring hard knocks the air out and turns mousse into sauce. Use a spatula and wide, slow folds.
  • Do not over-set the gelatin: Boiling gelatin weakens it. Warm it only until liquid, then mix it straight into the puree.

Storage

Refrigerate the mousse cups, covered, for up to 2 days. The texture is at its lightest on the first day. Do not freeze them, as freezing changes the creamy texture. Add the diced mango topping just before serving so it stays fresh.

Frequently Asked Questions

Can I use canned mango pulp?

Yes. Use 2 cups of canned mango pulp in place of fresh puree. Taste it first and reduce the powdered sugar if the pulp is already sweetened.

Can I make this without gelatin?

You can, but the mousse will be softer and will not hold its shape as well. Serve it in cups as a soft dessert and keep it well chilled until serving.

Why is my mousse runny?

The most common causes are under-whipped cream or gelatin that was boiled. Whip to true soft peaks, and warm the gelatin only until liquid.

Can I make mango mousse cups ahead?

Yes. Make them up to 1 day ahead and keep them covered in the fridge. Add the diced mango and mint just before serving.
