Air Fryer Cheese-Stuffed Sweet Potato

What you need
This air fryer cheese-stuffed sweet potato is fluffy inside, lightly crisp in the skin, and loaded with a creamy soft-cheese centre — the kind of viral lunch that feels fancy but only needs a handful of ingredients. Pierce, air-fry until tender, split, stuff, and melt. Eat it as a main with salad or as a hearty side.
For the sweet potatoes:
- 2 medium sweet potatoes (about 250–300g each), scrubbed
- 1 tsp olive oil
- ½ tsp fine salt
- ¼ tsp black pepper
- ½ tsp smoked paprika (optional)
For the cheese stuffing:
- 100g garlic-herb soft cheese (or plain soft cheese + ½ tsp garlic powder + chopped chives)
- 40g grated mozzarella or cheddar (for melt)
- 2 tbsp Greek yoghurt or sour cream (optional, for extra creaminess)
- 1 spring onion, finely sliced
- Pinch of chilli flakes (optional)
- Fresh parsley or chives, to finish
- Flaky salt and black pepper
Optional toppings:
- Crispy bacon bits or chickpeas
- Hot sauce drizzle
- Side salad or steamed greens
Recipe Steps
- Scrub the sweet potatoes and pat dry. Pierce each several times with a fork. Rub with olive oil, salt, pepper and smoked paprika if using.
- Preheat the air fryer to 190 °C. Air-fry the sweet potatoes for 30–40 minutes, turning halfway, until a knife slides easily through the centre (time varies with size).
- Meanwhile, mix the soft cheese with grated mozzarella/cheddar, yoghurt if using, spring onion, chilli flakes, and a pinch of black pepper.
- Carefully split each potato lengthways (watch the steam). Fluff the flesh lightly with a fork, keeping the skin intact as a boat.
- Spoon the cheese mixture into the centres. Return to the air fryer for 2–4 minutes at 180 °C until the cheese is hot and melty.
- Finish with fresh herbs, flaky salt, and any toppings you like. Serve with salad for a full lunch plate.
Tips & Variations
- Faster cook: Microwave whole potatoes 4–6 minutes first, then air-fry 10–15 minutes to crisp the skin before stuffing.
- Protein lunch: Add black beans, shredded chicken, or tuna mayo under the cheese.
- Spicy salsa style: Top with salsa, yoghurt, and grated cheddar instead of soft cheese.
- Make ahead: Air-fry potatoes up to 2 days ahead; reheat, stuff, and melt when ready.
- Oven option: Bake at 200 °C fan for 40–50 minutes until tender, then stuff and grill 3–5 minutes.
