Crockpot Chicken Tortilla Soup

What you need

This crockpot chicken tortilla soup layers tender shredded chicken, beans, corn, tomatoes, and smoky spices in a hands-off slow-cooker dinner. Pile on crunchy tortilla strips, avocado, and lime for a cosy bowl.

For the soup:

  • 700g boneless skinless chicken breasts or thighs
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 x 400g cans chopped tomatoes
  • 1 litre chicken stock
  • 1 x 400g can black beans, rinsed
  • 150g frozen corn
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • Salt and pepper
  • Juice of 1 lime

For serving:

  • Tortilla strips or crushed tortilla chips
  • Avocado, coriander, lime wedges, and grated cheese

Recipe Steps

  1. Add chicken, onion, garlic, tomatoes, stock, beans, corn, cumin, paprika, chilli powder, salt, and pepper to the slow cooker.
  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
  3. Transfer chicken to a plate and shred with two forks. Return it to the soup.
  4. Stir in lime juice and taste for seasoning.
  5. Serve hot with tortilla strips, avocado, coriander, cheese, and extra lime.

Tips & Variations

  • Chicken thighs stay especially juicy in the slow cooker.
  • Add a diced jalapeño for extra heat.
  • Cool leftovers quickly and refrigerate up to 3 days; keep tortilla toppings separate.
