Crockpot Chicken Parmesan: Tender Chicken in Marinara with Melted Cheese

Crockpot Chicken Parmesan keeps everything people love about the classic: seasoned chicken, rich marinara, and a thick blanket of melted mozzarella and parmesan. The slow cooker does the long, gentle cooking, so the chicken turns tender while the sauce picks up garlic, herbs, and tomato flavor. Served over spaghetti with a little extra parmesan, it is a complete Italian-style dinner with very little hands-on work.

Why This Recipe Works

  • Slow, gentle heat keeps boneless chicken breasts tender instead of drying them out.
  • The marinara simmers with the chicken, so the sauce tastes cooked-down and full, not jarred.
  • Cheese goes on near the end, so it melts into a bubbly topping rather than disappearing into the sauce.
  • It serves neatly over spaghetti, which soaks up the extra sauce on the plate.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lb / 680 g)
  • Salt and black pepper, to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 cup (120 g) Italian-seasoned breadcrumbs
  • 1/2 cup (50 g) grated parmesan cheese, divided
  • 2 tbsp (30 ml) olive oil
  • 1 jar (24 oz / 680 g) marinara sauce
  • 2 cloves garlic, minced
  • 1 1/2 cups (170 g) shredded mozzarella cheese
  • 12 oz (340 g) spaghetti, for serving
  • Fresh basil leaves, for serving

How to Make Crockpot Chicken Parmesan

Step 1: Season and coat the chicken

Pat the chicken breasts dry and season with salt, pepper, Italian seasoning, and garlic powder. Mix the breadcrumbs with half the parmesan, then press each breast into the mixture to coat lightly. Brown the chicken briefly in olive oil in a skillet, about 2 minutes per side, just until golden.

Step 2: Load the slow cooker

Spread a thin layer of marinara in the slow cooker. Arrange the chicken in a single layer, top with the minced garlic and the remaining marinara, and cover. Cook on LOW for 4 hours or on HIGH for 2 hours 30 minutes, until the chicken is cooked through.

Step 3: Add the cheese

Sprinkle the mozzarella and remaining parmesan over the chicken. Cover and cook on HIGH for 15 to 20 minutes, until the cheese is fully melted and bubbling.

Step 4: Serve over spaghetti

Meanwhile, cook the spaghetti according to the package directions and drain. Serve each chicken breast over spaghetti with plenty of sauce, and finish with fresh basil and extra parmesan.

Tips

  • Keep the chicken in a single layer so it cooks evenly; overlap can leave some pieces undercooked.
  • Browning first is optional but adds color and helps the coating hold up in the sauce.
  • Check the chicken with a thermometer; it is done at 165 F (74 C) at the thickest part.
  • If the sauce looks thin, remove the lid for the last 20 minutes of cooking so it reduces slightly.

Storage

Cool leftovers completely, then store the chicken and sauce separately from the pasta in airtight containers in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave until steaming hot, adding a splash of water or broth if the sauce has thickened. Freeze the chicken and sauce (without pasta) for up to 2 months.

Frequently Asked Questions

Can I use chicken thighs instead of breasts?

Yes. Boneless, skinless thighs work well and stay tender over a long cook. Use the same times and check that they are cooked through before adding the cheese.

Do I have to bread the chicken?

No. For a lighter version, skip the breadcrumbs and cook the seasoned chicken directly in the marinara, then add the cheese as directed. The flavor stays the same, with a softer texture.

Can I cook the pasta in the slow cooker too?

It is not recommended for this recipe, since pasta cooked for hours in marinara turns soft and absorbs too much sauce. Cooking it separately keeps the texture right.

What sides go well with it?

A green salad, garlic bread, or roasted broccoli all work well, and garlic bread is useful for scooping up extra sauce.
