Chicken Alfredo (Creamy, Garlicky, and Ready in 35 Minutes)

This chicken alfredo is the weeknight version of a restaurant classic: juicy sliced chicken, tender fettuccine, and a cream sauce that is silky, garlicky, and loaded with Parmesan. The whole thing comes together in about 35 minutes, mostly in one pan, and it tastes far more indulgent than the effort suggests. Keep some pasta water back, and the sauce will cling to every strand.

If you love creamy pasta, pair this dish with Creamy Garlic Parmesan One-Pan Pasta and Creamy Marry Me Chicken Pasta for a creamy-pasta rotation that never gets boring.

Why This Recipe Works

  • The chicken is seasoned and rested: A quick sear plus a short rest keeps the slices juicy instead of dry.
  • Real Parmesan thickens the sauce: Freshly grated Parmesan melts into the cream and gives body without flour or a roux.
  • Pasta water is the secret: A splash of starchy water loosens the sauce and helps it coat the pasta evenly.
  • One pan, fast cleanup: The sauce builds in the same pan as the chicken, so the browned bits become part of the flavor.

Ingredients

  • 12 oz (340 g) fettuccine (penne works too)
  • 1 1/2 lb (680 g) boneless, skinless chicken breasts, sliced into cutlets
  • 1 teaspoon (6 g) fine salt, divided, plus more to taste
  • 1/2 teaspoon (1 g) black pepper
  • 1/2 teaspoon (1 g) garlic powder
  • 2 tablespoons (30 ml) olive oil
  • 4 tablespoons (55 g) unsalted butter
  • 4 cloves garlic, minced
  • 2 cups (480 ml) heavy cream
  • 1 1/2 cups (150 g) freshly grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon (0.6 g) ground nutmeg (optional)
  • 2 tablespoons chopped fresh parsley, for serving

How to Make Chicken Alfredo

Step 1: Cook the pasta

Boil the fettuccine in well-salted water until 1 minute shy of al dente. Reserve 1 cup (240 ml) of the pasta water, then drain. Do not rinse the pasta.

Step 2: Sear the chicken

Season the chicken with half the salt, the pepper, and the garlic powder. Heat the olive oil in a large skillet over medium-high heat and sear the chicken 4 to 5 minutes per side, until golden and cooked through. Rest for 5 minutes, then slice.

Step 3: Build the cream sauce

Melt the butter in the same skillet over medium heat. Add the garlic and cook 30 seconds, then pour in the cream and simmer gently for 3 to 4 minutes until slightly thickened. Whisk in the Parmesan a handful at a time until smooth, then add the nutmeg, if using, and the remaining salt.

Step 4: Toss and serve

Add the pasta to the sauce and toss, adding splashes of reserved pasta water until the sauce coats every strand. Fold in the sliced chicken, taste and adjust the salt, and serve with extra Parmesan and parsley.

Tips

  • Grate your own Parmesan: Pre-grated cheese resists melting and can make the sauce grainy.
  • Keep the heat gentle: Cream sauces break if they boil hard; a gentle simmer is all you need.
  • Do not overcook the pasta: It finishes in the sauce, so pulling it a minute early keeps it from going soft.
  • Serve right away: Alfredo thickens as it cools, so plate it as soon as it is tossed.

Storage

Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in a skillet over low heat with a splash of cream or milk, stirring until smooth again. Freezing is not recommended, as cream sauces can separate when thawed.

Frequently Asked Questions

Can I use penne instead of fettuccine?

Yes. Penne, rigatoni, or any short pasta works well and holds the sauce nicely; cook it the same way and toss as directed.

Why is my alfredo sauce grainy?

Grainy sauce usually comes from pre-grated Parmesan or heat that is too high. Use freshly grated cheese, keep the simmer gentle, and whisk in the cheese gradually.

Can I use half-and-half instead of heavy cream?

You can, but the sauce will be thinner and more likely to split. If you do, simmer it a little longer and add the Parmesan off the heat.

How do I know the chicken is done?

The slices should be golden outside and reach 165°F (74°C) at the thickest part. Resting for 5 minutes keeps the juices in.
