Chicken Tikka Masala (Creamy, Smoky, Restaurant-Style at Home)
Chicken tikka masala is the curry everyone orders, and it is even better made at home. Tender chicken marinates in spiced yogurt, chars under high heat, then simmers in a silky tomato-cream sauce that is warmly spiced without being fiery. The sauce comes together in one pan, the whole dish takes about an hour and twenty minutes, and it tastes like it simmered all day.
Serve it with basmati rice and warm naan for scooping up every drop of sauce. If you love Indian-inspired dinners, try Creamy Butter Chicken Pasta and Filipino Chicken Adobo for more bold, saucy weeknight favorites.
Why This Recipe Works
- The yogurt marinade does two jobs: It tenderizes the chicken and carries the spices deep into the meat.
- High heat gives the char: Searing the chicken hot and fast mimics the tandoor and adds smoky flavor no gentle simmer can.
- The sauce is balanced, not just hot: Tomato, cream, garam masala, and a pinch of sugar round each other out.
- It is better the next day: Like most curries, the flavors deepen overnight, so leftovers are a gift.

How to Make Chicken Tikka Masala
Step 1: Marinate the chicken
Mix half the yogurt with the lemon juice, ginger, half the garlic, half the garam masala, cumin, paprika, turmeric, and a good pinch of salt. Toss in the chicken, cover, and refrigerate for 30 minutes (or up to overnight).
Step 2: Sear the chicken
Heat the oil in a large skillet over high heat. Shake excess marinade off the chicken and sear in a single layer for 3 to 4 minutes per side until charred at the edges and cooked through. Remove to a plate.
Step 3: Build the sauce
Lower the heat to medium. Cook the onion in the same pan for 5 minutes until soft, then add the remaining garlic and garam masala and cook for 1 minute until fragrant. Pour in the crushed tomatoes and simmer for 10 minutes until slightly thickened.
Step 4: Finish creamy and combine
Stir in the cream and sugar, return the chicken and any juices to the pan, and simmer gently for 5 minutes. Season with salt, rest for 5 minutes, and serve with cilantro, basmati rice, and warm naan.
Tips
- Chicken thighs beat breasts here: Thighs stay juicy under high heat and in the sauce; breasts dry out more easily.
- Do not skip the char: Those browned, slightly blackened edges are where the smoky restaurant flavor comes from.
- Simmer the sauce before the cream: Ten minutes of tomato simmering tames the acidity so the sauce tastes rich, not sharp.
- Control the heat: This version is mild-to-medium. Add a diced chili with the onion or a pinch of cayenne for more fire.
Storage
Refrigerate leftovers in an airtight container for up to 4 days, or freeze the curry (without rice) for up to 3 months. Reheat gently on the stove, adding a splash of cream or water if the sauce has thickened. The flavor improves after a night in the fridge.
Frequently Asked Questions
Is chicken tikka masala spicy?
This version is warmly spiced but mild-to-medium, not fiery. The heat comes mainly from garam masala and black pepper; add cayenne or fresh chili to turn it up.
Can I use chicken breast instead of thighs?
Yes, but watch the cooking time closely and sear for 2 to 3 minutes per side so the breast does not dry out. Thighs are more forgiving and more flavorful here.
Do I need a tandoor oven?
No. A ripping-hot skillet or a broiler gives the charred edges that make tikka taste like tikka. A grill pan works too.
What should I serve with tikka masala?
Basmati rice and warm naan are the classics. A simple cucumber salad or raita on the side balances the richness nicely.
