Shepherd’s Pie (Rich Lamb Filling Under Fluffy Mashed Potatoes)

Shepherd's Pie

Shepherd’s pie is British comfort food at its best: a deeply savory lamb filling, simmered with carrots, peas, and onion in a rich gravy, baked under a thick blanket of fluffy mashed potatoes until the top turns golden and crisp at the edges. It is the kind of dinner that fills the house with a good smell and fills everyone up properly. One baking dish feeds six generously, and leftovers reheat beautifully for lunch the next day.

For more cozy, crowd-pleasing dinners, try Creamy Chicken Pot Pie and Classic Meatloaf — both belong on the same comfort-food rotation as this pie.

Why This Recipe Works

  • Real lamb, properly browned: Browning the lamb first builds the deep flavor that makes the filling taste rich, not flat.
  • A gravy that actually thickens: A spoonful of flour and a good simmer give a filling that holds its shape when served.
  • Fluffy, sturdy mash: Buttery mashed potatoes spread cleanly and bake up golden without sinking into the filling.
  • Make-ahead friendly: Assemble it a day ahead, refrigerate, and bake when you need it.

Ingredients

  • 2 lbs (900 g) russet potatoes, peeled and cubed
  • 1 1/2 lbs (680 g) ground lamb

  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 tablespoons (16 g) all-purpose flour

How to Make Shepherd’s Pie

Step 1: Make the mashed potatoes

Boil the potatoes in salted water for 15 to 18 minutes until very tender. Drain well, then mash with half the butter and the warm milk until smooth and fluffy. Season with salt and pepper and set aside.

Step 2: Brown the lamb and vegetables

Heat the olive oil in a large oven-safe skillet over medium-high heat. Brown the lamb, breaking it up, for 6 to 8 minutes. Add the onion and carrots and cook for 5 minutes more, then stir in the garlic, flour, and tomato paste and cook for 1 minute.

Step 3: Simmer the filling

Pour in the stock and Worcestershire sauce, scraping up the browned bits. Add the peas and thyme, then simmer for 8 to 10 minutes until the gravy thickens enough to coat a spoon. Season well and remove from the heat.

Step 4: Top and bake

Heat the oven to 400°F (200°C). Spread the mashed potatoes over the filling, rough up the surface with a fork, and dot with the remaining butter. Bake for 25 to 30 minutes until the top is golden and the filling bubbles at the edges. Rest for 10 minutes before serving.

Tips

  • Drain the potatoes well: Wet potatoes make gluey mash. Let them steam in the colander for a minute before mashing.
  • Fork marks matter: Roughed-up potato peaks crisp and brown in the oven — a smooth top stays pale.
  • Rest before scooping: Ten minutes of resting lets the filling set so servings hold their shape.
  • Use ground beef if you prefer: That version is technically cottage pie, and it works exactly the same way.

Storage

Refrigerate leftovers in an airtight container for up to 4 days, or freeze the baked pie for up to 3 months. Reheat covered in a 350°F (175°C) oven until hot through, then uncover for 5 minutes to re-crisp the top.

Frequently Asked Questions

What is the difference between shepherd’s pie and cottage pie?

Shepherd’s pie is made with lamb, while cottage pie is made with beef. The method is identical, so either meat works in this recipe.

Can I make shepherd’s pie ahead of time?

Yes. Assemble it fully, cover, and refrigerate for up to 2 days. Bake from cold, adding 10 to 15 minutes to the bake time, and check that the center is piping hot.

Why is my filling watery?

The gravy needs a proper simmer to thicken. If it still looks thin, simmer for 3 to 4 more minutes before topping with potatoes, and always rest the baked pie for 10 minutes.

Can I freeze shepherd’s pie?

Yes, it freezes very well. Cool completely, wrap tightly, and freeze for up to 3 months. Thaw overnight in the fridge and reheat in the oven.
