Jack-o’-Lantern Stuffed Peppers (The Spooky 45-Minute Halloween Dinner)

What You Need
- 4 large orange bell peppers (choose squat, sturdy ones with flat bottoms)
- 1 lb (450 g) ground beef (80/20; or ground turkey)
- 1 cup (185 g) cooked long-grain white rice
- 1 small yellow onion, finely diced (about 1 cup / 150 g)
- 2 cloves garlic, minced
- 1 cup (240 g) marinara sauce
- 1 cup (100 g) shredded mozzarella cheese
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- 2 tbsp (30 ml) olive oil
- 1/4 cup (10 g) chopped fresh parsley, for garnish

How To Make It
- Carve the peppers. Preheat the oven to 375°F (190°C). Slice the tops off the peppers and scoop out the seeds and ribs. Using a small sharp paring knife, carve a jack-o’-lantern face into each pepper — two triangle eyes, a triangle nose, and a jagged grin. Cut on a cutting board with the pepper lying on its side so the knife work stays safe.
- Start the filling. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion; cook 6-7 minutes, breaking the beef up with a spoon, until the meat is browned and the onion is soft.
- Season and sauce. Stir in the garlic, Italian seasoning, smoked paprika, salt, and pepper; cook 1 minute until fragrant. Add the marinara sauce and cooked rice; stir to combine and simmer 2 minutes. Taste and adjust salt.
- Stuff the peppers. Stand the carved peppers upright in a 9×13-inch (23×33 cm) baking dish. Spoon the beef-and-rice filling generously into each pepper, mounding it slightly above the rim.
- Bake. Cover the dish loosely with foil and bake 25 minutes. Uncover, top each pepper with mozzarella, and bake 5 more minutes until the cheese is melted and bubbling. Let rest 5 minutes before serving.
- Serve. Place the jack-o’-lantern faces forward on plates, scatter with fresh parsley, and serve with a spoonful of warm marinara.

- Pick carveable peppers: Squat, heavy orange peppers with thick walls hold the face shape best; tall thin ones slump in the oven.
- Make ahead: Stuff the peppers (unbaked) up to 1 day ahead and refrigerate; add 5 extra minutes to the covered bake time.
- Swap the protein: Ground turkey, Italian sausage, or a plant-based crumble all work — keep the seasoning the same.
