They look like they flew straight out of a haunted cave — midnight-glossy, shatteringly crispy wings with black sesame “bat speckles” catching the light. But the real magic is the crunch: a baking-powder dry brine gives you deep-fried-level crispiness from the air fryer with barely any oil, and then everything gets tossed in a sticky sriracha-honey “bat cave” glaze that’s sweet, savory, and just fiery enough. No oven preheating, no greasy splatter, no 40-minute wait — these go from fridge to party platter in 25 minutes flat. They are the first thing to vanish at every Halloween spread.

What You Need

  • 2 lbs (900 g) chicken wings, split into flats and drumettes, patted very dry
  • 1 tbsp (8 g) cornstarch
  • 1 tsp (4 g) baking powder (aluminum-free — NOT baking soda)
  • 1 tsp (6 g) kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 3 tbsp (60 g) honey
  • 2 tbsp (30 ml) low-sodium soy sauce
  • 1 tbsp (15 ml) sriracha (use 2 tsp for mild)
  • 1 tsp (5 ml) rice vinegar
  • 1 tsp black sesame seeds, for the spooky finish
  • Cooking spray or 1 tsp neutral oil

How To Make It

  1. Dry-brine for crunch. In a large bowl, whisk the cornstarch, baking powder, salt, pepper, garlic powder, and smoked paprika. Add the patted-dry wings and toss until every wing is evenly coated. Rest 10 minutes at room temperature (or up to 8 hours uncovered in the fridge for maximum crispiness).
  2. Air fry until shatteringly crisp. Lightly spray the air fryer basket. Arrange the wings in a single layer with space between them (cook in 2 batches if needed). Air fry at 400°F (200°C) for 15–18 minutes, flipping halfway, until deeply golden, crisp, and cooked through (165°F / 74°C internal).
  3. Make the bat-cave glaze. While the wings cook, combine the honey, soy sauce, sriracha, and rice vinegar in a small saucepan. Simmer over medium heat 2–3 minutes, stirring, until slightly thickened, dark, and glossy.
  4. Toss like they just left the cave. Transfer the hot crispy wings to a large bowl, pour over the warm glaze, and toss until every wing shines with a midnight-dark coating.
  5. Finish and serve. Shower with the black sesame seeds for the “bat speckle” effect and serve immediately with extra glaze for dipping.

Tips & Variations

  • The crispiness secret: Baking powder (not soda!) raises the skin’s pH so it browns and crisps faster. Combined with patting the wings very dry, it’s the difference between soggy and shattering.
  • Don’t crowd the basket: Air needs to circulate. Two smaller batches beat one soggy batch every time.
  • Heat control: 1 tablespoon of sriracha gives a gentle kick; drop to 2 teaspoons for kid-friendly wings or push to 2 tablespoons for full fire-breathing mode.
