Death by Chocolate Cupcakes (The Ultra-Fudgy 40-Minute Triple-Chocolate Recipe)

Death by chocolate cupcakes with swirled chocolate frosting and chocolate chunks on a dark plate

These death by chocolate cupcakes are the real deal — an ultra-fudgy dark chocolate crumb, a molten ganache core hiding in the middle, and a silky chocolate buttercream swirl on top. That’s three layers of chocolate in every single bite, and the whole batch is oven-ready in about 10 minutes of actual work. The secret is hot coffee in the batter: it deepens the cocoa flavor without a hint of coffee taste. Bake a batch for National Chocolate Cupcake Day (October 18) — or any day that needs serious chocolate.

What You Need

  • For the cupcakes:
  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (45 g) unsweetened Dutch-process cocoa powder
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (110 g) packed brown sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 1/2 cup (120 ml) hot brewed coffee (or hot water)
  • 1/2 cup (120 ml) buttermilk, at room temperature
  • 1/3 cup (80 ml) neutral oil
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • For the molten ganache core:
  • 1/2 cup (90 g) semi-sweet chocolate chips
  • 1/4 cup (60 ml) heavy cream
  • For the chocolate buttercream:
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 1/2 cups (180 g) powdered sugar
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of fine salt
  • Chocolate shavings, to decorate

Recipe Steps

  1. Heat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Whisk the flour, cocoa, both sugars, baking soda, baking powder, and salt in a large bowl. In a second bowl whisk the buttermilk, oil, egg, and vanilla. Pour the wet into the dry, stir until just combined, then stir in the hot coffee last.
  3. Divide among liners (2/3 full) and bake 18–20 minutes, until a toothpick comes out with moist crumbs. Cool 5 minutes in the tin, then on a rack.
  4. Heat the cream until steaming, pour over the chocolate chips, rest 2 minutes, stir smooth. Cool until thick but spoonable, about 15 minutes.
  5. Remove a small plug from the center of each cooled cupcake with an apple corer or teaspoon, spoon in 1 teaspoon ganache, replace a thin cap.
  6. Beat the butter creamy, beat in powdered sugar, cocoa, cream, vanilla, and salt until fluffy, about 2 minutes. Pipe swirls and top with chocolate shavings.

Tips & Variations

  • Hot coffee is the magic: it blooms the cocoa for a deeper chocolate flavor — you won’t taste coffee in the finished cupcake. Hot water works, but coffee is better.
  • Don’t overbake: pull them when the toothpick shows moist crumbs. An extra 2 minutes is the difference between fudgy and dry.
  • Room-temperature dairy matters: cold buttermilk and egg can make the batter curdle slightly and bake up dense. Twenty minutes on the counter fixes it.
  • Make-ahead: bake the unfrosted cupcakes up to 2 days ahead (airtight at room temp), fill and frost the day you serve. The ganache core stays molten-soft at room temperature.
  • Peanut butter twist: swap the ganache core for a spoonful of creamy peanut butter — death by chocolate-peanut-butter.

Frequently Asked Questions

What makes them “death by” chocolate?

Three separate chocolate layers: a dark-cocoa fudgy cupcake, a molten ganache core, and chocolate buttercream frosting. Most chocolate cupcakes stop at one or two — these go all the way.

Can I make death by chocolate cupcakes without coffee?

Yes — swap the hot coffee for hot water 1:1. The coffee deepens the cocoa flavor without tasting like coffee, but hot water still gives you a moist, fudgy crumb.

How do I get the ganache core perfectly molten?

Fill the cores while the cupcakes are fully cool but the ganache is still spoonable (about 15 minutes of cooling). At room temperature the center stays soft and gooey; refrigerating firms it up, so serve within a day for maximum melt.

Can I freeze these cupcakes?

Freeze the baked, unfilled, unfrosted cupcakes up to 2 months in an airtight container. Thaw at room temperature, then fill and frost fresh — the ganache and buttercream are always best made the day you serve.
