Spooky chocolate cupcakes with marshmallow ghosts

These spooky chocolate cupcakes are the easiest Halloween win you’ll bake all October. One bowl, dark chocolate batter, and fluffy cocoa frosting — then the fun part: marshmallow ghosts with candy eyes, perched on every cupcake. They’re moist, deeply chocolatey, and gone in minutes at any Halloween party. Ready in 45 minutes, and kids can decorate their own — which is half the joy.

For a full Halloween spread, serve these alongside our Witches’ Brew Punch, Spider Deviled Eggs, Monster Halloween Cookies, and Bloody Red Velvet Cupcakes.

What You Need

  • 1½ cups (190g) all-purpose flour
  • ¾ cup (65g) unsweetened cocoa powder
  • 1 cup (200g) granulated sugar
  • ½ cup (110g) packed light brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp fine salt
  • 1 large egg, at room temperature
  • ¾ cup (180ml) whole milk
  • ⅓ cup (80ml) vegetable oil
  • 2 tsp vanilla extract
  • ¾ cup (180ml) hot water
  • ½ cup (115g) unsalted butter, softened (for frosting)
  • 2 cups (250g) powdered sugar
  • ¼ cup (25g) unsweetened cocoa powder
  • 2–3 tbsp milk (for frosting)
  • 12 large marshmallows (ghost toppers)
  • 24 mini chocolate chips (ghost eyes)
  • Halloween sprinkles, to finish

How To Make It

  1. Heat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners. Whisk the flour, cocoa powder, both sugars, baking powder, baking soda and salt in one large bowl.
  2. In a second bowl, whisk the egg, milk, oil and vanilla until smooth. Pour into the dry ingredients and stir until just combined — a few small lumps are fine.
  3. Pour in the hot water and whisk briefly. The batter will be thin — that’s what makes the cupcakes moist.
  4. Divide the batter among the 12 liners, filling each about two-thirds full. Bake 18–20 minutes, until a toothpick comes out with a few moist crumbs. Cool in the pan 5 minutes, then move to a wire rack and cool completely before frosting.
  5. Make the frosting: beat the butter 2 minutes until creamy. Add the powdered sugar and cocoa a cup at a time, then the milk one tablespoon at a time, beating until fluffy. Spread or pipe onto the cooled cupcakes.
  6. Decorate: stand a marshmallow upright on each cupcake like a little ghost — press it in gently so it sticks. Dab the mini chocolate chips on as eyes (a tiny dot of frosting works as glue if they won’t stick). Scatter Halloween sprinkles around the ghosts and serve.

Tips & Variations

  • Cool completely before frosting — even slightly warm cupcakes melt the frosting. If you’re in a hurry, 15 minutes in the fridge does it.
  • Ghost rescue: marshmallows tilt? Push a lollipop stick or toothpick through the ghost into the cupcake — invisible and sturdy. Trim marshmallows’ bottoms flat for a steadier stand.
  • No marshmallows? Pipe white frosting ghosts instead — a tall swirl, two chocolate-chip eyes. Works just as well and looks adorable.
  • Make ahead: bake the cupcakes up to 2 days ahead (unfrosted, airtight). Frost and decorate the day of the party.
  • Cupcake Day bonus: this same recipe, undecorated with a simple cocoa swirl, is a perfect classic chocolate cupcake for National Chocolate Cupcake Day (Oct 18).
