Why This Recipe Works

  • Lighter sauce, same silkiness — Greek yogurt and Parmesan replace heavy cream without losing the creamy finish.
  • Steakhouse sear — high heat and a dry surface give the steak a deep brown crust.
  • One-pan sauce — the sauce builds in the same pan, so every browned bit becomes flavor.
  • Weeknight-fast — pasta and steak cook in parallel; dinner lands in 30 minutes.

Ingredients

Sirloin keeps it lean and tender, zucchini and cherry tomatoes add freshness, and the sauce is just broth, Greek yogurt and Parmesan. Use room-temperature yogurt so it blends in silky-smooth.

How to Make Creamy Steak Penne

  1. Boil the penne to al dente; save a cup of pasta water.
  2. Season and sear the steak strips; rest them so they stay juicy.
  3. Sauté zucchini and tomatoes in the same pan.
  4. Off the heat, whisk in yogurt and Parmesan for the sauce; toss everything together.

Tips for the Best Steak Penne

  • Bring the steak to room temperature for 20 minutes before searing — it browns instead of steaming.
  • Never boil the yogurt sauce — heat splits it. Off the heat, always.
  • Slice the steak against the grain for the most tender bites.
  • A splash of pasta water loosens the sauce and helps it cling to the penne.

Storage

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of milk or broth, stirring often so the sauce stays creamy.

Frequently Asked Questions

What cut of steak is best?

Sirloin is our pick — lean, tender and affordable. Flank steak or ribeye also work; slice flank steak thinly against the grain.

Can I use heavy cream instead of yogurt?

Yes — swap in 3/4 cup of cream and skip the off-heat step. The yogurt version is lighter with a pleasant tang.

How do I keep the steak tender?

Sear hot and fast, rest it before slicing, and add it back at the very end so it only warms through.

Can I add other vegetables?

Spinach, mushrooms and bell peppers all fit. Add spinach at the end so it just wilts.

Juicy seared steak strips, zucchini and blistered cherry tomatoes tossed with penne in a lighter garlic-Parmesan cream sauce. All the comfort of a steakhouse pasta, made healthier and ready in 30 minutes.

Ingredients

  • 12 ounces (340 g) penne pasta

  • 1 pound (450 g) sirloin steak, cut into strips

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon fine sea salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 medium zucchini (about 200 g), sliced into rounds

  • 1 cup (150 g) cherry tomatoes, halved

  • 1 cup (240 ml) low-sodium beef broth or reserved pasta water

  • 3/4 cup (180 g) plain Greek yogurt, room temperature

  • 1/2 cup (50 g) grated Parmesan, plus more to serve

  • 2 tablespoons chopped fresh parsley

Directions

  • Cook the penne in salted water until just al dente. Reserve 1 cup of pasta water, then drain.
  • Season the steak strips with the garlic powder, Italian seasoning, salt and pepper.
  • Sear the steak in the olive oil over high heat for 2 to 3 minutes per side until browned. Set aside to rest — do not overcook.
  • In the same pan over medium heat, sauté the garlic and zucchini for 3 minutes. Add the cherry tomatoes and cook 1 to 2 minutes until they start to blister.
  • Lower the heat. Pour in the broth and let it bubble for 1 minute, scraping up the browned bits.
  • Take the pan OFF the heat and whisk in the Greek yogurt and Parmesan until a smooth, creamy sauce forms. (Off the heat keeps the yogurt from splitting.)
  • Toss the penne and steak (with its juices) through the sauce, loosening with a splash of pasta water if needed. Serve with parsley and extra Parmesan.
