Garlic-Herb Butter Roast Turkey
A garlic-herb butter roast turkey is the centerpiece version of Thanksgiving that does not ask you to brine for days or fuss over complicated steps. Soft butter mixed with garlic, thyme, rosemary, and sage goes under and over the skin, basting the bird as it roasts and seasoning the meat all the way through. The result is crisp, deeply golden skin and juicy meat, with pan drippings ready to become gravy.

Why This Recipe Works
- Butter under the skin seasons the meat: It melts directly against the breast, keeping the leanest part moist while the skin crisps.
- Herbs in the butter, not just on top: Garlic and herbs mixed into the butter stay put and flavor the drippings too.
- A hot start, then a steady roast: Starting at 425 degrees F (220 degrees C) crisps the skin, then lowering the heat lets the bird cook through evenly.
- Resting is built in: Thirty minutes of rest lets the juices settle, so carving does not dry the meat out.
Ingredients
- 1 whole turkey, 12 to 14 lb (5.4 to 6.4 kg), thawed, giblets and neck removed
- 3/4 cup (170 g) unsalted butter, softened
- 6 cloves garlic, minced (about 2 tablespoons / 20 g)
- 2 tablespoons (8 g) fresh thyme leaves
- 2 tablespoons (8 g) chopped fresh rosemary
- 2 tablespoons (8 g) chopped fresh sage
- 2 teaspoons (12 g) fine salt
- 1 teaspoon (2 g) black pepper
- 1 onion, quartered (about 8 oz / 225 g)
- 1 lemon, halved
- 4 stalks celery, cut into large pieces (about 8 oz / 225 g)
- 1 cup (240 ml) low-sodium chicken broth, for the pan

How to Make Garlic-Herb Butter Roast Turkey
Step 1: Prep the turkey and the herb butter
Remove the turkey from the fridge 1 hour before roasting and pat it very dry inside and out. Mash the softened butter with the garlic, thyme, rosemary, sage, salt, and pepper. Season the cavity lightly with salt and pepper, then fill it with the onion, lemon halves, and celery.
Step 2: Butter the bird
Gently loosen the skin over the breast with your fingers, taking care not to tear it. Spread about two-thirds of the herb butter under the skin, massaging it over the breast meat from the outside, then rub the rest over the skin. Tuck the wing tips behind the back and tie the legs together with kitchen twine.
Step 3: Roast hot, then steady
Set the turkey on a rack in a roasting pan and pour the broth into the pan. Roast at 425 degrees F (220 degrees C) for 30 minutes, then reduce the heat to 325 degrees F (165 degrees C) and roast for about 2 hours 45 minutes more, until a thermometer in the thickest part of the thigh reads 165 degrees F (74 degrees C). Tent loosely with foil if the skin darkens too fast.
Step 4: Rest, then carve
Transfer the turkey to a cutting board and rest it for 30 minutes before carving. Do not skip the rest: it keeps the juices in the meat. Reserve the pan drippings for gravy, then carve and serve.
Tips
- Pat the skin dry: Dry skin crisps far better than damp skin, so take the time with paper towels before buttering.
- Use a thermometer, not the clock: Ovens and bird sizes vary. The thigh must read 165 degrees F (74 degrees C); the breast will read a few degrees higher near the bone.
- Tent, do not wrap: If the skin browns too quickly, lay foil loosely over the top so steam can still escape and the skin stays crisp.
- Save the drippings: The herb butter drippings in the pan are seasoned and rich; strain them for gravy rather than discarding them.
Storage
Refrigerate carved turkey in an airtight container for up to 4 days, with a splash of broth or gravy to keep it moist when reheating. Freeze carved meat in portions for up to 3 months; thaw overnight in the fridge. Reheat gently, covered, in a 325 degrees F (165 degrees C) oven until warmed through.
Frequently Asked Questions
Do I need to brine this turkey first?
No. The herb butter under the skin keeps the breast moist, and a full brine is not needed for this recipe. If you already brine out of habit, reduce the salt in the herb butter by half.
How long do I roast a 12 to 14 lb turkey?
At 325 degrees F (165 degrees C) after the initial hot roast, plan on roughly 13 to 15 minutes per pound (about 2 hours 45 minutes to 3 hours 30 minutes total). Always confirm with a thermometer: 165 degrees F (74 degrees C) in the thigh.
Can I prep the herb butter ahead?
Yes. Mix the butter up to 3 days ahead and refrigerate it, then let it soften at room temperature for 30 minutes before spreading. It can also be made with the turkey prepped and buttered the night before, covered, in the fridge.
What if my turkey skin browns too fast?
Tent the breast loosely with foil and continue roasting. The foil slows browning without steaming the skin the way a tight cover would.
