Cornbread Casserole

Cornbread casserole is the Thanksgiving side that disappears first, and it is also one of the easiest dishes on the table. Whole kernel corn, creamed corn, sour cream, butter, and cornbread mix go into one bowl, then into a baking dish, and the oven does the rest. What comes out is golden on top, soft and spoonable in the middle, and rich enough to stand next to turkey and gravy without getting lost.

Serve it with Creamy Make-Ahead Mashed Potatoes and Sausage & Herb Bread Stuffing for a Thanksgiving spread that covers every comfort-food base.

Why This Recipe Works

  • Two kinds of corn: Whole kernels add texture while creamed corn keeps the center moist and custardy.
  • Sour cream adds richness: It keeps the crumb tender and adds a gentle tang that balances the sweetness of the corn.
  • One bowl, no mixer: Stirring by hand is enough, and it protects the texture from overmixing.
  • It holds well: The casserole stays warm and scoopable for a long time, which matters on a crowded holiday table.

Ingredients

  • 1 box (8.5 oz / 240 g) cornbread muffin mix
  • 1 can (15 oz / 425 g) whole kernel corn, drained
  • 1 can (14.75 oz / 418 g) creamed corn
  • 1 cup (240 g) sour cream
  • 1/2 cup (115 g) unsalted butter, melted and slightly cooled
  • 2 large eggs, beaten
  • 1 cup (115 g) shredded sharp cheddar cheese
  • 1/2 teaspoon (3 g) fine salt

How to Make

Step 1: Heat the oven and prep the dish

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9 x 13 inch (23 x 33 cm) baking dish or a 2-quart casserole dish.

Step 2: Mix the batter

In a large bowl, whisk the melted butter, sour cream, and eggs until smooth. Stir in the whole kernel corn, creamed corn, and salt, then fold in the cornbread mix until just combined. A few small lumps are fine.

Step 3: Add cheese and fill the dish

Fold in half of the shredded cheddar. Pour the batter into the prepared dish, spread it evenly, and sprinkle the remaining cheddar over the top.

Step 4: Bake until golden and set

Bake for 40 to 45 minutes, until the top is golden and the center is set but still soft. A toothpick inserted in the center should come out with a few moist crumbs, not wet batter. Rest for 10 minutes before scooping.

Tips

  • Do not overmix: Stir just until the dry mix disappears. Overmixing makes the casserole dense instead of tender.
  • Check early in a shallow dish: In a 9 x 13 inch dish, start checking at 40 minutes; deeper dishes may need up to 50 minutes.
  • Let it rest: Ten minutes of resting lets the center set so servings scoop cleanly instead of running.
  • Add heat if you like: Fold in 1 can (4 oz / 115 g) diced green chilies, drained, for a mild Southwestern note.

Storage

Refrigerate leftovers in an airtight container for up to 4 days. Reheat individual servings in the microwave, or warm the whole dish, covered, in a 325 degrees F (165 degrees C) oven until heated through. Freeze baked casserole in portions for up to 2 months; thaw overnight in the fridge before reheating.

Frequently Asked Questions

Is cornbread casserole the same as corn pudding?

They are close cousins. Cornbread casserole uses cornbread mix and bakes into a sliceable, spoonable dish with a golden top, while corn pudding is usually softer and more custardy. This recipe sits in the middle: moist in the center with a set, golden top.

Can I make cornbread casserole ahead?

Yes. Assemble the batter, cover, and refrigerate for up to 24 hours, then bake as directed, adding about 5 minutes to the bake time. Or bake it fully, refrigerate, and reheat before serving.

Why is my casserole soggy in the middle?

It was likely underbaked or cut too soon. Bake until the center is set and a toothpick shows moist crumbs rather than wet batter, then rest for 10 minutes before serving.

Can I use fresh or frozen corn instead of canned?

Yes. Use 1 1/2 cups (250 g) cooked fresh or thawed frozen kernels in place of the canned whole kernel corn. Keep the creamed corn as listed, since it provides much of the moisture.
