Why This Recipe Works

  • Potatoes as the base — crispy, seasoned cubes carry the toppings better than a shell.
  • Beef + beans = double protein — hearty, budget-friendly and filling.
  • Hot and cold contrast — warm potatoes and beef under cool avocado and sour cream.
  • Build-your-own format — everyone loads their bowl their way; zero complaints.

Ingredients

Potatoes, ground beef, beans and taco seasoning form the base; the toppings are the classic taco lineup — cheddar, tomato, avocado, jalapeño, red onion, sour cream and cilantro.

How to Make a Loaded Potato Taco Bowl

  1. Roast the taco-seasoned potato cubes until crisp, 25 to 30 minutes.
  2. Brown the beef with taco seasoning; stir in the beans.
  3. Layer potatoes, beef and beans in bowls.
  4. Load the toppings and finish with sour cream and cilantro.

Tips for the Best Taco Bowls

  • Cut potatoes evenly and do not crowd the pan — crisp edges are the whole point.
  • Add a splash of water with the seasoning so it coats the beef evenly.
  • Dice the avocado last and toss it with lime juice to keep it green.
  • Warm the bowls first — the potatoes stay crisp longer on a warm base.

Storage

Store the potatoes, beef mixture and toppings separately in the fridge for up to 3 days. Reheat the potatoes in a 400°F (200°C) oven or air fryer and the beef in a skillet; assemble with fresh toppings.

Frequently Asked Questions

Can I use sweet potatoes?

Yes — they roast the same way and add a sweet contrast to the taco spices. Our Sweet Potato Burger Bowl uses the same trick.

Ground turkey instead of beef?

Absolutely — season it the same and add a teaspoon of olive oil since turkey is leaner.

How do I make it vegetarian?

Double the beans, add charred corn, and season everything the same way. It is still hearty and protein-rich.

What sauce can I add?

A chipotle crema (sour cream + lime + a spoon of adobo sauce) is fantastic drizzled over the top.
