This Jack-o’-Lantern Pumpkin Pie takes the silkiest spiced pumpkin filling, tucks it into a flaky golden crust, and tops it with a grinning jack-o’-lantern face cut from pie dough. It bakes up gorgeous, slices clean, and lands on the Halloween dessert table like a showstopper — no fondant, no food coloring, just classic fall flavor with a spooky face. One bowl for the filling, one baking sheet for the face, and the party dessert is done. What You Need

  • 2 refrigerated pie crusts (or homemade 9-inch pie dough)
  • 1 can (15 oz / 425 g) pumpkin puree (NOT pumpkin pie filling)
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 2 large eggs, at room temperature
  • 1/4 cup (50 g) packed brown sugar
  • 2 tsp (6 g) pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 1 tsp (5 ml) vanilla extract
  • Whipped cream, for serving

Recipe Steps

  1. Line the pie dish. Unroll one pie crust into a 9-inch pie dish and crimp the edges decoratively. Refrigerate 15 minutes — a cold crust bakes up flakier and holds its shape.
  2. Cut the jack-o’-lantern face. Roll out the second crust on a lightly floured surface. With a small paring knife (or mini cookie cutters), cut two triangle eyes and a jagged grinning mouth. Transfer the cutouts to a parchment-lined tray and chill while you mix the filling.
  3. Whisk the filling. In a large bowl, whisk the pumpkin puree, sweetened condensed milk, eggs, brown sugar, pumpkin pie spice, cinnamon, salt, and vanilla until completely smooth and silky — no lumps.
  4. Fill and bake. Pour the filling into the chilled pie shell. Bake at 425°F (220°C) for 15 minutes, then reduce to 350°F (175°C) and bake 35–40 minutes more, until the edges are set and the center still has a slight jiggle.
  5. Bake the face. Lay the jack-o’-lantern cutouts on a parchment-lined baking sheet and bake at 350°F (175°C) for 10–12 minutes, until golden and crisp. (Bake them separately so the face stays sharp — it will not sink into the filling.)
  6. Assemble and serve. Cool the pie on a wire rack for 2 hours so the filling sets. Arrange the baked jack-o’-lantern face on top just before serving. Add a cloud of whipped cream to each slice.

Tips & Variations

  • The jiggle test: The center should wobble like set gelatin when you nudge the pan — it finishes setting as it cools. Overbaking is the #1 cause of cracked pumpkin pie.
  • Keep the face sharp: Chill the cutouts until firm before baking and they hold their edges beautifully. A light egg wash gives them a golden glow.
  • Make ahead: Bake the pie a day early and refrigerate; bake the face the day of and assemble just before the party so it stays crisp.
  • Pumpkin puree, not pie filling: Canned pumpkin pie filling is pre-sweetened and pre-spiced — it will throw off the sugar and spice balance here.
