What You Need
- 1 package (14 oz / 400g) refrigerated pie crusts, thawed (2 crusts)
- 1 cup (245g) canned pumpkin puree (not pumpkin pie filling)
- 1/3 cup (70g) packed brown sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1/4 tsp fine salt
- 1 large egg, beaten
- 1 tbsp (15ml) milk
- 2 tbsp coarse sugar, for sprinkling
- All-purpose flour, for dusting the work surface

How To Make It
- Make the filling: stir pumpkin puree, brown sugar, pumpkin pie spice, vanilla, salt until smooth.
- Cut 8 rounds ~4 inches (10cm) from floured pie crusts.
- Spoon 1 tbsp filling per round, fold, crimp edges with a fork, cut jack-o’-lantern faces into tops.
- Brush with egg+milk wash, sprinkle coarse sugar.
- Air fry at 350°F (175°C) 10–12 min until golden (batches if small basket).
- Cool 5 min; serve warm with vanilla ice cream.

Tips & Variations
- Seal the edges with a dab of water so the crimp holds and the filling stays inside.
- Don’t overfill — 1 tbsp of filling max per round, or it will burst out in the air fryer.
- Spice substitute: use 1/2 tsp cinnamon + 1/4 tsp ginger + 1/8 tsp nutmeg + 1/8 tsp cloves.
- Small air fryer? Work in 2 batches and keep the first batch warm in a low oven.
- Reheat leftovers 3–4 min at 325°F (160°C) to bring back the crisp.
