Jack-o'-Lantern quesadillas with carved spooky faces served on a plate

Meet the Halloween dinner kids actually ask for: jack-o’-lantern quesadillas — golden, crispy tortillas carved with silly spooky faces, loaded with a gooey cheesy chicken, black bean and corn filling. They look like party magic, but they are genuinely a 25-minute weeknight recipe: carve the faces in two minutes, fill, flip, done. No piping bags, no decorating skills, no candy overload before the real trick-or-treating starts. Slice them into wedges and watch the plate empty before the pizza even arrives.

If you’re planning a full spooky menu, our Spooky Chocolate Cupcakes make the perfect sweet finish to this savory Halloween dinner.

What You Need

Carving jack-o'-lantern faces into flour tortillas with a small paring knife
  • 8 large flour tortillas (10-inch / 25 cm), about 600 g
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese
  • 1 1/2 cups (225 g) shredded cooked chicken
  • 1 cup (170 g) black beans, drained and rinsed
  • 1/2 cup (75 g) corn kernels (frozen or canned, drained)
  • 1/2 cup (120 g) salsa, plus extra for serving
  • 2 tbsp (16 g) taco seasoning
  • 2 tbsp butter or neutral oil, for the skillet

How To Make It

Cooking jack-o'-lantern quesadillas in a skillet until golden and crisp
  1. Carve the jack-o’-lantern faces: lay 4 of the tortillas flat on a board. With a small sharp paring knife, cut two triangle eyes and a jagged zigzag mouth into each one — keep the cuts simple, wide shapes crisp up best. (Keep the little cut-outs; kids love snacking on them.)
  2. Make the filling: in a large bowl, toss the shredded chicken, black beans, corn, salsa, taco seasoning, cheddar and mozzarella until everything is evenly combined and coated.
  3. Assemble: spread about 3/4 cup of filling over each of the 4 uncut tortillas, leaving a 1/2-inch border clean. Lay a carved tortilla on top of each one, face side up, and press gently.
  4. Heat the skillet: melt 1/2 tbsp butter in a large skillet over medium heat. Slide in one quesadilla, face side up, and cook 2-3 minutes until the bottom is deep golden and crisp.
  5. Flip carefully with a wide spatula and cook 2-3 minutes more, until the cheese is fully melted and both sides are golden. Repeat with the remaining quesadillas, adding butter as needed.
  6. Serve: rest 1 minute on a board, cut into wedges, and serve warm with sour cream and extra salsa for “blood” dipping.

Tips & Variations

  • Medium heat is the sweet spot — too hot and the tortilla burns before the cheese melts; too low and you lose the crisp.
  • Shred your own cheese: bagged shredded cheese has anti-caking starch that melts less smoothly.
  • Veggie swap: skip the chicken and double the beans and corn.
  • Make-ahead: assemble up to 4 hours ahead, cover and refrigerate, then cook straight from the fridge (add 1 extra minute per side).
