Beef Tallow Roasted Potatoes (Extra Crispy, Fluffy Inside)

Roasted potatoes in bowl

Beef tallow roasted potatoes are the upgrade your roast dinners have been waiting for. Tallow has a high smoke point and a deep, savory flavor, so the potatoes come out of the oven deeply golden, shatteringly crisp on the outside, and fluffy inside, in a way that regular oil rarely matches. Parboiling first, then roughing up the edges, is the step that makes the crunch happen.

They belong next to any big Sunday roast, and they pair beautifully with Loaded Baked Potato Soup and a Loaded Potato Taco Bowl night when potatoes are the star.

Why This Recipe Works

  • Tallow fries hotter than butter: Its high smoke point lets the oven run hot enough for real crisping without burning.
  • Parboiling builds fluffy interiors: A short boil cooks the centers through, so the oven’s job is purely crisping the outside.
  • Roughed-up edges crisp best: Shaking the drained potatoes creates a starchy, craggy surface that turns into crunch.
  • One hot pan, no flipping fuss: Preheating the pan in tallow means the cut sides start crisping the moment they land.

How to Make Beef Tallow Roasted Potatoes

Step 1: Parboil the potatoes

Preheat the oven to 425 degrees F (220 degrees C). Put the potatoes in a large pot, cover with cold water, add the 1 tablespoon salt, and bring to a boil. Simmer for 8 to 10 minutes, until the edges are just tender when poked with a knife but the centers are still firm. Drain well.

Step 2: Rough up the edges

Return the drained potatoes to the hot pot. Put the lid on and shake firmly a few times to rough up the surfaces. Let them steam-dry for 2 minutes with the lid off; dry surfaces crisp far better than wet ones.

Step 3: Heat the tallow

Put the tallow in a large rimmed baking sheet and place it in the preheated oven for 5 minutes, until the tallow is melted and shimmering. Carefully remove the hot pan.

Step 4: Roast until deeply crisp

Tip the potatoes onto the hot pan and turn them gently to coat in tallow. Spread into a single layer with space between pieces and sprinkle with garlic powder, flaky salt, and pepper. Roast for 35 to 40 minutes, turning once halfway, until deeply golden and crisp. Toss with rosemary or parsley and serve hot.

Tips

  • Do not crowd the pan: Potatoes need space to crisp. If they are touching, use two pans rather than one crowded one.
  • Cut evenly or suffer: Uneven chunks mean burnt small pieces and pale big ones. Aim for pieces as close to the same size as you can.
  • Salt the boiling water well: Potatoes absorb seasoning from the water, and it seasons them all the way through, not just on the surface.
  • Serve immediately: Roasted potatoes lose their crunch as they sit. If you must hold them, keep them in a single layer in a warm oven with the door slightly ajar.

Storage

Refrigerate leftover roasted potatoes in an airtight container for up to 4 days. Reheat in a 425 degree F (220 degrees C) oven on a baking sheet for 10 to 12 minutes, which restores much of the crunch. Microwaving makes them soft, so skip it. Do not freeze; the texture turns mealy.

Frequently Asked Questions

Where do I buy beef tallow?

Look in the cooking-oil aisle, the meat department, or at a butcher counter. It is sold in jars or tubs and keeps for months in the fridge. You can also render it from beef fat trimmings at home.

Can I use another fat instead of tallow?

Yes, though the flavor will differ. Duck fat is the closest swap, and lard works well too. Olive oil and butter burn or smoke at this oven temperature and will not crisp the same way.

Why are my roasted potatoes not crispy?

The usual causes are wet potatoes, a crowded pan, or an oven that is not hot enough. Steam-dry the potatoes after draining, give them space, and make sure the oven is fully preheated to 425 degrees F (220 degrees C).

Which potatoes are best for roasting?

Russets give the fluffiest interiors and the crispiest edges. Yukon Golds are a good second choice, with a slightly creamier center and a golden color.
