White Chicken Chili

This white chicken chili is the cozy bowl everyone asks me to make again: tender shredded chicken, creamy white beans and sweet corn in a gently spiced, cream-cheese-enriched broth. Easy, delicious and ready in about 40 minutes.

It is milder than a red chili but never boring — warm cumin, green chiles and a squeeze of lime keep it bright. Set out the toppings and let everyone build their perfect bowl. For another cozy bowl, try our creamy sausage potato chowder or our slow cooker beef chili next.

Why This Recipe Works

  • Mashing a cup of the beans thickens the chili naturally — no flour, no cornstarch slurry needed.
  • Cream cheese melts in at low heat off the boil, so the broth turns creamy and smooth, never grainy.
  • Rotisserie chicken makes a 40-minute chili taste like it simmered for hours.
  • Lime juice goes in at the very end, keeping the whole pot tasting bright instead of heavy.

Ingredients

One pot and a rotisserie chicken shortcut. US measurements with metric in brackets.

  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cans (4 oz / 115 g each) diced green chiles
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground coriander (optional)
  • 1/4 tsp cayenne pepper (optional, to taste)
  • 4 cups (950 ml) low-sodium chicken broth
  • 3 cups (420 g) cooked shredded chicken (rotisserie works great)
  • 2 cans (15 oz / 425 g each) white beans (Great Northern or cannellini), drained and rinsed
  • 1 cup (165 g) sweet corn kernels (fresh, frozen or canned)
  • 4 oz (115 g) cream cheese, cubed and softened
  • 1/2 cup (120 ml) heavy cream or half-and-half (optional)
  • Juice of 1/2 lime
  • Salt and black pepper, to taste

For serving:

Shredded Monterey Jack cheese, avocado slices, fresh cilantro, and tortilla strips or chips.

How to Make White Chicken Chili

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook 4-5 minutes until softened.
  2. Stir in the garlic, green chiles, cumin, oregano, coriander and cayenne and cook 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a gentle simmer.
  4. Mash about 1 cup of the beans with a fork until mostly smooth. Add all the beans (whole and mashed), the corn and the shredded chicken. Simmer for 15 minutes, stirring occasionally.
  5. Reduce the heat to low. Stir in the cream cheese until completely melted and smooth, then stir in the cream if using. Do not let the chili boil.
  6. Stir in the lime juice, season with salt and pepper, and rest 5 minutes. Serve hot with the toppings.

Tips for the Best White Chicken Chili

  • Soften the cream cheese first — it melts in smoothly instead of leaving little white flecks.
  • Want it thicker? Blend one ladleful of the chili and stir it back in.
  • Set up a toppings bar (cheese, avocado, cilantro, chips, sour cream, jalapenos) and let everyone build their bowl.
  • For more heat, add a diced jalapeno with the onion or extra cayenne.

Storage

Refrigerate leftovers in an airtight container for up to 4 days; reheat gently over low heat without boiling. This chili freezes well for up to 2 months (add fresh toppings after thawing). Thaw overnight in the fridge before reheating.

Frequently Asked Questions

Can I make white chicken chili in a slow cooker?

Yes. Add everything except the cream cheese, cream and lime and cook on Low for 4-6 hours. Stir in the cream cheese for the last 30 minutes, then finish with the cream and lime.

Can I use raw chicken instead of cooked?

Yes. Simmer 2 whole chicken breasts in the broth for 18-20 minutes until cooked through, shred with two forks, and return them to the pot with the beans.

Why is my chili too thin?

Mash more of the beans, or simmer uncovered for 5-10 extra minutes. It also thickens noticeably as it rests.

What beans work best?

Great Northern and cannellini are the classics — creamy and mild. Navy beans work too; chickpeas are a firmer, nuttier swap.
