Chewy Chocolate Chip Cookies

There is a reason this is the most baked cookie on the planet — and this version gets the texture exactly right: crisp golden edges, a soft chewy middle, and pockets of melty chocolate in every single bite. The whole thing comes together in one bowl with no mixer and no chilling, so warm cookies are 25 minutes away. Once you try this ratio of melted butter to brown sugar, there is no going back.

Prep: 15 min | Cook: 10 min | Total: 25 min | Yield: 24 cookies

What You Need

  • 1 cup (227g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) packed brown sugar
  • 1/2 cup (100g) granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups (340g) chocolate chips
  • Flaky sea salt, for sprinkling (optional)

Recipe Steps

  1. Heat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk the melted butter with the brown sugar and granulated sugar until smooth and glossy, about 1 minute. Beat in the egg and vanilla until fully combined.
  3. Add the flour, baking soda, and salt. Fold gently until just combined — a few streaks of flour are fine.
  4. Stir in the chocolate chips, reserving a small handful to press on top of each dough ball before baking.
  5. Scoop 2-tablespoon balls of dough onto the prepared sheets, spacing them 2 inches apart. Sprinkle with flaky sea salt if you like.
  6. Bake 9–11 minutes, until the edges are set and golden but the centers still look slightly soft. Cool on the pan for 5 minutes, then move to a rack. They finish setting as they cool — that is the chewy secret.

Tips & Variations

  • Do not overbake — the cookies look underdone at 10 minutes and that is exactly right; carryover heat sets the centers.
  • For thicker, puffier cookies, chill the dough 30 minutes before scooping.
  • Measure flour with the spoon-and-level method so the dough stays soft, not cakey.
  • Swap the chips for chopped dark chocolate bar pieces if you want big melty pools.
