The Creamiest Baked Mac and Cheese (45-Minute Comfort Classic)
The Creamiest Baked Mac and Cheese (45-Minute Comfort Classic)

There are two kinds of mac and cheese people in this world: stovetop fans and baked mac and cheese loyalists. If you have ever watched a golden, bubbly casserole emerge from the oven with that crackly cheese crust, you know which side is right. This is the creamiest baked mac and cheese you will ever make at home: a silky sharp-cheddar sauce, elbow macaroni cooked just past al dente so it soaks up every drop, and a buttery panko topping that goes shatteringly crisp in the oven. Nine simple ingredients, 45 minutes, and one pan of pure comfort. If you love cozy pasta dinners, do not miss our garlic parmesan pasta and butter chicken pasta either.
Prep: 15 min | Cook: 30 min | Total: 45 min | Servings: 8 (about 1 cup each)
What You Need
- 16 oz (450g) elbow macaroni
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour (30g)
- 3 cups whole milk (720ml)
- 3 cups shredded sharp cheddar cheese (300g)
- 1 cup shredded mozzarella cheese (100g)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup panko breadcrumbs (30g)

How To Make It
- Heat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Cook the macaroni in well-salted boiling water for 1 minute less than the package says (it finishes in the oven). Drain well.
- In a large pot or Dutch oven, melt the butter over medium heat. Whisk in the flour and cook, whisking constantly, for 2 minutes until it smells toasty and turns lightly golden.
- Slowly pour in the milk while whisking to keep it smooth. Bring to a gentle simmer, stirring, and cook 3 to 4 minutes until the sauce thickens enough to coat the back of a spoon.
- Take the pot off the heat. Stir in the salt, pepper, cheddar, and mozzarella a handful at a time until the sauce is completely silky and smooth. Taste and adjust salt.
- Add the drained macaroni and fold until every elbow is coated. Spread into the baking dish and scatter the panko breadcrumbs evenly over the top.
- Bake 25 to 30 minutes, until the top is deeply golden and the edges are bubbling. Rest 10 minutes before serving so the sauce sets.

Tips & Variations
- Shred your own cheese: pre-shredded cheese is coated with anti-caking starch that can make the sauce grainy. Freshly shredded cheddar melts into a noticeably silkier sauce.
- Don’t overcook the pasta: pull the macaroni a minute early so it stays firm through the oven — mushy mac is the number-one baked mac and cheese mistake.
- Add a flavor boost: stir in 1/2 tsp mustard powder or a pinch of smoked paprika with the flour for a deeper, more grown-up cheesy flavor.
- Make it ahead: assemble the whole dish (hold the panko), refrigerate up to 24 hours, add the panko, and bake 10 minutes longer straight from the fridge. For a sweet finish to this cozy meal, try our Moist Pumpkin Bread (The Easy One-Bowl Fall Recipe).
