Hot Cocoa Bombs (Melty Chocolate Shells, Marshmallow Centers, Pure Winter Magic)

Hot cocoa bombs turn an ordinary mug of milk into a small show. Each hollow chocolate sphere hides cocoa mix and mini marshmallows, and the moment hot milk hits it, the shell cracks open and everything swirls together. They look like a bakery treat, but the method is just melted chocolate, a silicone mold, and a little patience.

Why This Recipe Works

  • Thin shells melt on cue: Two thin layers of chocolate set firm enough to hold, yet melt fast under hot milk.
  • The mold does the shaping: A silicone sphere mold gives smooth, even halves with no special tempering equipment.
  • Filling is flexible: Cocoa mix, marshmallows, crushed candy, or sprinkles all work, so every bomb can be different.
  • They store beautifully: Finished bombs keep for weeks, making them an easy make-ahead gift.

Ingredients

  • 12 oz (340 g) chocolate chips or chopped chocolate (milk, dark, or white)
  • 6 tablespoons (60 g) hot cocoa mix
  • 1 cup (50 g) mini marshmallows
  • 2 tablespoons (30 g) chocolate chips, for drizzling (optional)
  • Sprinkles or crushed candy cane, for decorating (optional)

How to Make Hot Cocoa Bombs

Step 1: Melt and mold the shells

Melt the chocolate in a heatproof bowl over simmering water, or in the microwave in 30-second bursts, stirring until smooth. Spoon about 1 tablespoon into each cavity of a silicone sphere mold and use the back of the spoon to coat the sides evenly. Chill for 10 minutes.

Step 2: Add a second coat

Brush a second thin layer of melted chocolate over any thin spots, especially around the rims. Chill for 15 minutes more, until the shells are fully firm and release cleanly from the mold.

Step 3: Fill half the spheres

Set half the shells open-side up. Spoon 1 tablespoon of hot cocoa mix and a small handful of mini marshmallows into each one, keeping the filling below the rim so the halves seal neatly.

Step 4: Seal and decorate

Warm a plate in the microwave, then press each empty half rim-down on the warm plate for a few seconds to melt the edge. Press it onto a filled half and hold for 10 seconds to seal. Drizzle with melted chocolate and sprinkles, then chill for 15 minutes until set.

Tips

  • Do not overfill: Filling above the rim is the main reason seals fail, so keep marshmallows tucked inside.
  • Work with cool hands: Warm hands soften the shells fast; if a shell gets tacky, pop it back in the fridge for 5 minutes.
  • Fix cracks with a warm spoon: A spoon warmed in hot water smooths a crack or a rough seam in seconds.
  • Use very hot milk: Lukewarm milk will not melt the shell properly. Heat milk until steaming, then pour slowly over the bomb.

Storage

Store finished bombs in an airtight container at cool room temperature for up to 2 weeks, or refrigerate for up to 1 month. Keep them away from heat and humidity, which dull the chocolate. They also freeze well for up to 2 months; thaw at room temperature before using.

Frequently Asked Questions

Why won’t my bombs seal shut?

The rim usually needs more heat, or the filling is sitting above the edge. Press the empty half on a warm plate until the rim just melts, remove a few marshmallows if needed, and hold the halves together for a full 10 seconds.

Do I need to temper the chocolate?

No. Melting chocolate chips gently and chilling them in the mold gives a firm shell that works for home use. Tempering adds shine and snap, but it is not required for bombs that will be melted in milk.

Can I make these dairy-free?

Yes, use dairy-free chocolate and a dairy-free cocoa mix, and serve with oat or almond milk. Check that your marshmallows are gelatin-free if you need them fully plant-based.

What size mold should I use?

A standard 2-inch (5 cm) sphere mold is ideal. Smaller molds are fiddly to fill, and larger ones need more milk than a normal mug holds.
