What You Need

  • 8 small tart apples (Granny Smith), about 1.4 kg total
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) heavy cream
  • ½ cup (115 g) unsalted butter
  • ½ cup (160 g) light corn syrup
  • 1 tsp vanilla extract
  • ½ tsp fine sea salt
  • 8 wooden sticks
  • 3.5 oz (100 g) dark chocolate, for the spiderweb drizzle
  • Halloween sprinkles + candy eyes, for decorating

How To Make It

  1. Prep the apples: swirl each apple in very hot tap water 30 seconds to dissolve wax; dry completely, push a wooden stick into the stem end, line a baking sheet with parchment, chill apples 15 minutes.
  2. Combine caramel: in a heavy-bottomed saucepan combine sugar, butter, heavy cream, corn syrup, salt; stir over medium heat until sugar dissolves and butter melts.
  3. Cook to soft-ball stage: clip on a candy thermometer, bring to a steady boil without stirring; cook to 245°F (118°C), about 12–15 minutes; remove from heat, stir in vanilla.
  4. Dip: tilt pan so caramel pools; dip and swirl each apple quickly, let excess drip back, set upright on parchment.
  5. Chill to set: refrigerate dipped apples 20 minutes until caramel is firm.
  6. Decorate spooky: melt dark chocolate and zigzag a spiderweb pattern over each apple (spiral from top, drag lines from center out with a toothpick); press on candy eyes and Halloween sprinkles while chocolate is wet; for the “bloody” option drizzle warm red candy melts instead.

Tips & Variations

  • Wax is the enemy: the hot-water bath trick in Step 1 isn’t optional — wax keeps caramel from sticking, so don’t skip it.
