Why This Recipe Works

  • Charred corn is non-negotiable — the smoky spots are the whole elote point.
  • The sauce is the real elote formula — mayo (or yogurt), cotija, lime, chili and garlic.
  • Spiced chicken keeps it a dinner — chili, paprika and cumin echo the corn’s seasoning.
  • Bowl format = perfect ratios — every forkful gets rice, chicken, corn and sauce.

Ingredients

Chicken, corn, rice and a five-ingredient elote sauce. Cotija is traditional and crumbly-salty; feta is the easy supermarket stand-in. Frozen corn chars beautifully — just dry it first.

How to Make a Street Corn Chicken Bowl

  1. Cook the rice; season and sear the chicken.
  2. Char the corn in a dry, hot skillet.
  3. Whisk the elote sauce.
  4. Build the bowls and finish with onion, cilantro, cotija and lime.

Tips for the Best Elote Bowl

  • Get the pan truly hot before the corn goes in — and do not stir for the first 2 minutes.
  • Dry frozen corn on paper towels so it chars instead of steaming.
  • Salt at the end — cotija and the sauce already bring plenty.
  • A pinch of Tajín over the top is the authentic street-cart finish.

Storage

Store the components separately in the fridge for up to 3 days; keep the sauce and lime apart. Reheat the rice and chicken, then assemble with fresh toppings — the corn reheats fine in a hot skillet.

Frequently Asked Questions

Can I use chicken thighs?

Yes — thighs stay extra juicy and char beautifully. Cook to 165°F (74°C).

What if I cannot find cotija?

Feta is the closest swap; finely grated Parmesan also works in a pinch.

Can I grill the corn on the cob instead?

Absolutely — grill 3 to 4 ears until charred, then cut off the kernels. It is the most authentic route.

How spicy is it?

Mild and smoky as written. Add a diced jalapeño or a pinch of cayenne to the sauce for real heat.
