Why This Recipe Works
- Greek yogurt = creamy, not heavy — it melts into the filling and adds protein instead of fat.
- Black beans do double duty — fiber plus extra protein in every bite.
- Sauce under AND over — the bottom layer keeps the tortillas tender, never dry.
- Rotisserie shortcut — store-bought cooked chicken makes this a 15-minute prep.
Ingredients
Cooked shredded chicken, black beans, red enchilada sauce, Greek yogurt, warm spices, tortillas and a modest amount of cheese — simple swaps, same enchilada satisfaction.

How to Make Healthy Chicken Enchiladas
- Stir the chicken, beans, spices, yogurt, some sauce and cheese into the filling.
- Roll the filling in warmed tortillas; line them up over a layer of sauce.
- Sauce and cheese the tops.
- Bake at 375°F (190°C) for 20 to 25 minutes until bubbling.
Tips for the Best Enchiladas
- Warm tortillas before rolling — 20 seconds in the microwave under a damp towel stops cracks.
- Do not drown them — sauce should coat, not swim; extra goes on the table for serving.
- Rest before serving — 5 minutes lets the filling set so the rolls slice cleanly.
- Shred chicken while warm — it pulls apart in seconds with two forks.
Storage
Cover and refrigerate leftovers for up to 4 days; reheat covered at 350°F (175°C) for 15 minutes. The assembled, unbaked dish freezes well for up to 3 months — thaw overnight in the fridge before baking.
Frequently Asked Questions
Can I make these ahead?
Yes — assemble up to a day ahead, cover and refrigerate. Add 5 to 10 minutes to the bake time.
Flour or corn tortillas?
Both work. Flour rolls easiest; corn is traditional and gluten-free — just warm them well so they do not crack.
How spicy are they?
Mild to medium with a standard sauce. Choose a hot enchilada sauce or add a diced jalapeño to the filling for more heat.
Can I use rotisserie chicken?
It is our favorite shortcut — one rotisserie chicken gives you almost exactly the 3 cups you need.
